BrandNewCake Carboxymethylcellulose (E466) 175 g Tylose, also known as carboxymethylcellulose (CMC), from the Brand New Cake range. It thickens and adds elasticity to marzipan and fondant, and works well as a stabiliser in ice cream.
Usage instructions: To make edible glue, mix 1 part CMC Tylose powder with 30 parts water, leave overnight, then use as needed.
To strengthen fondant: mix 1 teaspoon (about 3 g) of CMC Tylose powder into every 250 g of fondant. For ice cream, add 1.8–2.6 g per 750 g of mixture to improve stability.
