Callebaut Chocolate Callets Milk (C823) 2.5 kg are premium milk chocolate callets. They are similar to Callebaut’s popular 823 callets but have slightly lower fluidity, making them ideal for moulding, enrobing and flavouring applications.

For moulding, tempering, or coating, the C823 formula delivers consistent results. It also lends a rich flavour to mousse, ganache and other fillings. Each bag holds 2.5 kg of callets.

Its lower fluiditymakes it ideal for ganache, fillings and large moulded pieces, though it is less suited to delicate chocolate work.
