Chocolate Decoration Tool Stainless Steel Leaves Small This sturdy stainless-steel tool makes beautiful chocolate leaves for plating desserts or adding elegant accents to baked goods. Developed by award-winning pastry chef and chocolatier Frank Haasnoot, it delivers professional results in any kitchen.
Method: Place a sheet of baking paper or acetate on your work surface and secure it with a small amount of alcohol or oil. Dip the stainless-steel tool into tempered chocolate, then tap gently to allow excess chocolate to drip off. Invert the tool and press the chocolate onto the prepared sheet. Lift the tool slowly and let the decoration set for a few hours at about 20 °C before peeling it away.
