    Koopmans Professional Patent Flour 5 kg
    This versatile flour is ideal for baking light, tender doughnuts and fluffy pancakes. It can also be used as a thickener for soups and sauces.

    What do you need to bake pancakes?
    For pancakes, whisk together 250 g of this patent flour, 500 ml of milk, 2 eggs and a pinch of salt until smooth. Mix on high for a few minutes, then begin cooking. Prefer thinner pancakes? Simply stir in a little extra milk.

    For doughnuts, combine 1 kg of this flour with 800 ml water, 17 g salt, 50 g sugar, 80 g fresh yeast (or 25 g instant yeast), and optional mix-ins such as 400 g sultanas (plumped and drained), diced apple, or a sprinkle of cinnamon and a few drops of lemon juice.
    For oliebollen, combine 1000 g flour, 800 ml water, 17 g salt, 50 g sugar, 80 g fresh yeast (or 25 g instant yeast), up to 400 g of your chosen filling (raisins, diced apple, or both), 10 g cinnamon, and a few drops of lemon juice.

    Preparation
    Mix the flour with the sugar, yeast and salt (dissolve fresh yeast in water first). Add lukewarm water (38°C). Mix on the lowest setting, then incorporate the filling. Let the dough rise for 45 minutes. Heat the oil to 180°C and fry until golden.
