    Martellato Couverture Melting Pot, 1.8 litres, Black
    This professional melting pot heats chocolate and couverture evenly, reaching up to 55 °C, and offers a generous 1.8-litre capacity.

    Note:
    It is designed to keep chocolate at the ideal working temperature during or just before use.
    While you can melt chocolate directly in the pot, larger batches may require several hours.
    For faster melting, small batches can be microwaved in short bursts, while larger amounts are best gently heated in a bain-marie, stirring constantly to prevent scorching.
    If you prefer to use the pot for melting, set it to 45 °C the night before; by morning the chocolate will be at the ideal tempering temperature.


    Once the chocolate has fully melted and reached about 40–45 °C, lower the thermostat to 30 °C or below, then add some cool, room-temperature chocolate to the mix.

    Stir gently until the mixture cools to the manufacturer’s suggested working temperature.
    The final working temperature will be about 31°C for dark chocolate, 30°C for milk chocolate and 29°C for white chocolate.
    For precision, use a digital thermometer.
