    Martellato Couverture Melting Bowl 1.8 lt Black
    This couverture melting bowl is a professional heater for chocolate and couverture. The couverture melting tray can heat up to 55 degrees and has a capacity of 1.8 litres.

    Important hint:
    A melting pan is mainly intended to keep chocolate at the right temperature during or before processing.
    Melting chocolate in a melting pan can be done, but it usually takes several hours, depending on the amount to be melted.
    If you want to melt chocolate quickly, it is much quicker to do so in the microwave for small quantities and au bain marie (not too hot!) for larger quantities, where the chocolate is kept in constant motion.
    If you want to work with chocolate and still melt it in the melting trough, set the melting trough to 45°C, for example, the night before, then the chocolate will be ready to temper the next morning. 


    When the chocolate has melted completely and reached a temperature of around 40 -45°C turn the thermostat back to 30°C or lower and add  chocolate (at room temperature).

    Then stir this well to cool the chocolate to the temperature - recommended by the chocolate manufacturer.
    The temperature will be around 31°C for dark chocolate, 30°C for milk chocolate and 29°C for white chocolate.
    To measure the exact temperature, it is best to use a digital thermometer.
