This medium-sized mouldfeatures a detailed relief of a man, perfect for creating traditional Dutch speculaas figures. It can also be used to shape a Piet during the Sinterklaas season.
Traditionally used by bakers, a speculaas mould is a carved cookie stamp that imprints detailed shapes into dough. Although modern production has largely mechanised this craft, you can still create authentic, old-world speculaas with this medium-sized man figure.

Recipe for making speculaas dough:
Ingredients:
- 150 g butter
-125 g light brown caster sugar
1 tsp salt
2 level tablespoons speculaas spice blend (10 g)
1 tablespoon milk
50 g flaked almonds
200 g self-raising flour (or 200 g plain flour plus 1 tsp baking powder)
Method:Cream together the butter, sugar and salt until light and fluffy, then stir in the milk. Sift the self-raising flour and speculaas spice blend over the butter mixture, combine gently, then knead just until a smooth dough forms.
Chill the dough for at least 1 hour (overnight is best), then let it warm slightly before shaping with your speculaas mould.
How to use the speculaas board:
- Lightly grease the board with cooking oil
-Re-grease the board after two hours.
-Lightly dust the board with flour
-After at least 1 hour (or preferably overnight), remove the chilled dough from the refrigerator.
Let the dough warm to room temperature.
Press the chilled dough firmly into the board, then trim away the excess.
Turn the mould over and tap gently so the biscuit drops onto the baking tray.

Lightly dust the mould with flour and repeat.
Bake in a preheated oven at 200°C for about 20 minutes, or until golden brown.
