To make your own popcorn, heat a thin layer of oil or fat in a heavy saucepan. Once the fat begins to smoke, add enough kernels to cover the base in a single layer, place the lid on the pan, and shake gently to distribute the kernels evenly. After about 1 minute, the kernels will begin to pop. Keep the lid on and shake the pan occasionally to encourage even popping. Once the popping sound stops, remove the pan from the heat and transfer the popcorn to a serving bowl. Season to taste with sugar, salt, or your choice of dip, grated cheese, or honey.
