    These small, round granules are produced by compressing refined sugar under high pressure, creating a hard, slow-melting crystal that retains its shape during baking. Because it won’t melt in the oven, it’s ideal for adding texture and sparkle to your creations. Pearl Sugar P4 500 g is particularly suited to authentic Liège waffles, as well as sugar bread and other sweet treats.

    Below, we share a recipe for authentic Liège waffles.

    Size: P4 (approximately 5.6–8 mm).

    Here’s our recipe for authentic Liège waffles:

    Ingredients:

    • 750 g pastry flour
    • 270 g lukewarm milk
    • 70 g fresh yeast
    • 3 whole eggs and 2 additional egg yolks
    • Pinch of salt
    • 1 packet of vanilla sugar
    • 400 g soft butter or margarine
    • 500 g P4 pearl sugar.

    Method:

    • Blend the dry ingredients with the softened butter until a smooth dough forms.
    • Blend everything except the butter and pearl sugar until a soft dough forms.
    • Let the dough rest for 30 minutes.
    • Gently knead in the softened butter, then fold in the pearl sugar.
    • Portion the dough into 100-gram pieces.
    • Let the portions rest for 15 minutes.
    • Preheat your waffle iron.
      No greasing is needed.
    • Bake for about 3 minutes until golden and fragrant.

    Once golden brown, transfer the waffles to a wire rack to cool slightly, and they’re ready to serve.
