    RUF Cherry Meringue Cake Mix 350g
    The RUF Cherry Meringue Cake Mix 350g is a baking mix for making a light fruit cake with a meringue topping. With this mix, you can easily make a cake base with fruit and a layer of meringue with almonds. The combination of fruit and crunchy meringue creates a cake with different textures.

    This cake mix is ideal for quickly making a fruity cake without much preparation. As well as cherries, you can also make the cake with, for example, gooseberries, strawberries, rhubarb or other fruits. This makes it easy to vary with seasonal fruit and create a different fruit cake every time. Delicious as a dessert, with coffee or for a festive occasion.

    Method

    Temperature: top/bottom heat: approx. 160°C or fan oven: approx. 150°C
    Baking time: approx. 60 minutes
    Additional ingredients: 100g butter/margarine, 2 eggs (M), 1 jar of sour cherries (drained weight 350g), 100ml water

    Method

    • Drain the cherries in a sieve. 
    • Mix the CMT, softened butter or margarine and the eggs in a bowl. Beat briefly on low speed, then for about 3 minutes on high speed until you have a creamy batter. Pour the batter into a springform tin (Ø 26 cm) lined with baking paper, smooth the surface and scatter the cherries over the top.
    • Mix the meringue powder with the water in a grease-free bowl and beat with a hand mixer for about 3 minutes until stiff peaks form. Spread the meringue mixture over the cherries and sprinkle the almonds on top. 
    • Bake the cake in the centre of the preheated oven.
    • Once baked, remove the cake from the tin and leave to cool on a wire rack.
