BrandNewCake Barley Malt Flour Active (Light) Organic 150g This organic, active barley malt flour from Brand New Cake is a natural enzymatic bread improver. Its natural enzymes—amylases that convert starch into maltose and proteases that break down proteins—feed the yeast, support gluten development, and add depth to the crust. During baking, the remaining malt sugars react with proteins to create the bread’s characteristic flavour and colour. The malt flour also increases volume and helps slow staling for a longer shelf life.
Typical usage: 5–20 g per 1 kg of flour. Alternatively, use 0.5–2% of the flour weight.
