Italian Semola Rimacinata Flour 5kg Molino Grassi’s Italian Semola Rimacinata Flour 5kg is a flour made from durum wheat, a hard wheat variety, which has been ground extra finely. The word ‘rimacinata’ means ‘re-ground’, giving the semola a much finer texture than ordinary semolina. This fine grind produces a supple dough with a characteristic flavour and a beautiful golden-yellow colour.
Semola rimacinata is widely used for baking rustic breads with a firm crust and a light crumb. This flour is also ideal for classic Italian focaccia and ciabatta, giving the dough a good structure and a light texture. The flour can also be used for pizza, for example in the dough or as a dusting on the work surface to prevent sticking.
