    Molen de Hoop "Heavenly" Biscuit Mix 500g
    This blend of oat flakes and sunflower seeds delivers a hearty, nutty flavour and a satisfying texture. Shape the dough by hand for best results; a cutter is not recommended.

    Recipe
    For a standard batch, combine 500 g of mix with 165 g of butter or margarine; for extra depth, fold in a splash of lemon juice or zest, chopped nuts, or dried fruit such as dates or apricots.

    Method
    1. Preheat the oven to 180°C (fan oven 160°C).
    2. Cream the butter until smooth, then incorporate the mix and knead until a cohesive dough forms. If the dough feels dry, drizzle in a little water.
    3. Shape the dough into balls, set them on a greased baking sheet, and gently flatten.
    4. Bake for 15–20 minutes until lightly golden.
    5. Once baked, allow the biscuits to cool on the tray for a few minutes before transferring them to a wire rack to cool completely.

    Molen de Hoop is a tall windmill that was built in 1850 by H.B. Meyer and taken over by the Pijnappel family two years later. The mill remained in the family's possession for many years. In September 2014, In September 2014, Jan and Henriëtte passed the expanded business, Grutterij-Molen “De Hoop” Oud-Zevenaar, to the current managers: Frits manages the milling and bookkeeping, while Maaike oversees day-to-day operations and curates a range of premium baking supplies and gifts. Though demanding, the couple treats the work as a labor of love, ensuring the mill keeps running smoothly.

    Today the mill supplies premium flour, meal, bread mixes and cake mixes that are popular with hobby and professional bakers alike, and are proudly featured in the Baktotaal range.
