    Tartaric acid is used, for example, in jams and jellies, where it enhances the fruit flavour and helps to better preserve colour and aroma. It also provides a fresh, slightly tart counterpoint to sweetness in sweets, ice cream and fruit preparations. When preserving, it helps to retain colour and flavour.
